Method of Preparation:

  • Sweat in butter or margarine, onion and lleeks fine minced

  • Add the hot broth or Stock

  • Dissolve the flour in cold milk

  • Add to previous preparation, beating continuously.

  • Let simmer for an hour and a half.

  • Pass through a fine sieve  

  • Link with fresh cream.

  • Add the finishing garnish
