Christmas Fruits Cakes 

Weihnachtstollen ( German Christmas Cake ) 

Stollen is a fruitcake into bars, sprinkled with icing sugar on the outside. The cake is usually made with chopped candied fruit and / or dried fruit, nuts and spices. Stollen is a traditional German cake, usually eaten during the Christmas season this season, so called Weihnachtsstollen or Stollen.

Method of Preparation:

  • Macerate green raisins, blueberries in baking ron.

  • Dilute the yeast in warm milk into the bowl of inox

  • Agregar 200 gr. of flour,

  • Knead well (in mixer with the paddle of the mixer) and let mounting.

  • While put sugar in another bowl and mix with butter

  • Add salt, eggs, lemon peel and mix well to obtainhomogeneous mixture

  • Work flour paste as a volcano within a bowl, place yeast in the center diluted and the butter mixture. (In blender add to first mixture with the paddle always)

  • Add the remaining milk gradually feeling the dough (in places at sea level requires less liquid) 

  • Integrate chopped crystallized oranges, almonds and green grapes and blueberries previously macerated in rum.

  • Rectify the dough is very firm, if necessary add a little more flour.

  • Cover with a clean cloth and leave for 30 min to weigh. in one place and let cálido.

  • Knead and let stand again for 20 min. more.

  • Then roll the dough to form a broad band with two buns on the ends, one larger than the other. 

  • Place the cake on the lower baking tray or in a loan pan box

  • Bake in a medium heat oven for 1 hora

  • Retirar and varnished everything perfectly still warm with melted butter and sprinkle icing sugar generously over

  • Let's cool.

Important

In height above sea level or climates differ you may need to reduce or increase the liquid ingredients also the yeast.

The rule is in a greater heigh above sea level you need increased liquids and dicreased yeast; is in a lower heigh above sea level you need dicreased liquids and increased yeast
