Guajillo Pepper Sauce Recipe

A guajillo chili (chile guajillo in Spanish) is a variety of chili pepper of the species Capsicum annuum, which is widely used in the cuisine of Mexico.

Its fruits are large and mild in flavor, with only a small amount of heat (rating 2,500 to 5,000 on the Scoville scale). They are used to make the salsa for tamales; the dried fruits are seeded, soaked, pulverized to a thin paste, then cooked with salt and several other ingredients to produce a thick, red, flavorful sauce.

Method of Preparation:

Prepare the pasilla chile:

  • Have a large bowl of boiling water ready

  • Leave the chiles to soak for about 1 hour, no longer.

  • Do not attemp to skin the chiles.

  • Bring it to  boil on medium heat.

  • Drain them and set aside until you want to blend them.

  • Let aside the cooking water

Prepare the Borracha Sauce:

  • In a skillet heat the remained oil

  • Sweat in, the Onion Chopped & the garlic also fine chopped

  • Blend the guajillo chile with the sweaty onion & garlic in a blender with the chile cooking water

  • Put in a skillet the blended mixture

  • Add the orange juice 

  • Bring it to boil and let it reduce

  • Strain it by a medium mesh strainer

  • Rectify the season with table salt and chicken bouillon powder.

  • Let it cool.
