In
Mexico are called pico de gallo a regional variety of sauces,
which always includes fresh fruit and vegetables cut into
squares. The peaks are a rooster usual accompaniment of many
Mexican dishes. The most common variety of this sauce (a mixture
of tomato, onion and chopped green chiles) ingredients whose
colors correspond to the colors of the flag of Mexico, is also
called Mexican sauce or salsa flag.
Variety
Pico
de gallo salt: this is the most common variety, including red
tomatoes, onions and green peppers and may also include
cilantro, avocado and lemon.
Fresh
pico de gallo that includes fruits, like orange, cantaloupe,
watermelon, etc..
In
the Yucatan Peninsula called x'nipek (nose dog) and sometimes it
adds habanero chile and sour orange.
The
pico de gallo is not usually a dish, but served to accompany
other dishes such as guacamole, the muffins, poultry, salads,
criadillas etc.
In
Chile there is a very similar condiment called Pebre.
In
Argentina, there is salsa criolla, and use similar ingredients:
tomatoes, green onion and sweet pepper.
