Fine julienne of fried corn tortilla

 

 

 

 

 

Cooked shredded chicken or turkey

 

 

 

Method of Preparation:

  • In a comal grill onion the unpeeled garlic and all sides until golden

  • In a casserole pour the oil and sweat the fine chopped onion acitrone 

  • Wet with the Chicken Stock or White Beef Stock, bring to a boil 

  • Reduce the heat and leave a few minutes.

  • Remove the golden onion and garlic.

  • Add to the stock poached tomatoes chopped seedless, oregano, cumin and minced Xalapeno chile

  • Allow a few minutes seasoning

  • Rectify with the zest of citrus and salt

  • Remove from heat and add the citrus juices.

  • Termine serving with finely chopped cilantro and julienne of fried corn tortilla
