Method of Preparation:

  • Weigh the ingredients very well (the weight of the egg shellness).

  • In warm water bath until the sugar mixed with egg beating until it is well dissolved and form a strong foam.

  • Incorporate the sifted flour mixed with ground almonds out of the bath 

  • Butter warm without will be integrating at last beat.

  • Spread on a flexipat over a baking tray or a tray covered in rim on greased waxed paper.

  • Bake to dry firm while not brown
