Beets
Beta vulgaris L. , Beets, chard, also known as white betarava,
red beets, beterava, beterraga, beterrada (Canary Islands) and
beets, is a plant of the family Chenopodiaceae, which leaves and
root are edible.
There are many varieties of the species, some of which are used
for human food, as feed for other cattle, and for the production
of sugar (sugar beet, Beta vulgaris var. Altissima), others,
including Beta vulgaris var. cicla known as chard is grown for
its leaves.
Table is the variety of roots thick, fleshy and red, which are
mainly consumed cooked and the color is due to two pigments, and
the betacyanin betaxantin, which are indigestible, stained
boluses of food, excrement and urine color . However, due to its
non-toxic dye is often used in food products.
As a byproduct of sugar industry is the coseta beet. This
industrial waste is used for livestock feed mainly. Some of the
potential uses due to its high content of pectin is used for
biofuel production by an enzymatic treatment and subsequent
fermentation
The most common use of this plant is the direct use as food, but
also has other uses in food, such as:
Sugar that is extracted from some varieties, after several
trials. The varieties used in this production are triploid and
are much more productive.
